Mexican Salad

A vibrant and fresh salad packed with black beans, corn, tomatoes, and avocado, perfect as a side dish or a light main. Preparation Time: 15 minutes
Serving Size: 4 servings
Ingredients:
- 1 can black beans
- 1 can corn
- 1 can diced tomatoes
- 1 red onion
- 1 avocado
- 1 lime
- 1 small bunch fresh cilantro
- Salt and pepper to taste
Instructions:
1. Rinse and drain the black beans and corn.
2. Dice the red onion and avocado into small cubes.
3. In a large bowl, combine the black beans, corn, diced tomatoes, red onion, and avocado.
4. Squeeze the lime juice over the salad and add chopped cilantro.
5. Season with salt and pepper to taste. Mix well.
6. Allow the salad to chill in the refrigerator for about 15-30 minutes before serving.
7. Serve fresh as a side dish or as a light main course.
