Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or fusilli) - 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g fresh green peas
- 200 ml cream
- 100 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil, for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and set aside. 2. Heat olive oil in a large pan over medium heat. Add onion and garlic, sautéing until soft.
3. Add bell pepper and zucchini to the pan. Cook for about 5 minutes until the vegetables are tender.
4. Stir in the green peas and mix well. Cook for a few more minutes.
5. Pour the cream into the pan and stir. Let the mixture simmer on low heat for a few minutes.
6. Add the cooked pasta to the pan and mix until the pasta is well coated with the sauce.
7. Stir in the grated Parmesan cheese and season with salt and pepper. Mix until the cheese is melted.
8. Serve the pasta garnished with fresh basil.
