Serving Size: 4 servings
Ingredients:
- 250 g noodles - 200 g smoked pork (or vegan alternative like smoked tofu)
- 1 cucumber
- 1 bell pepper
- 1 carrot
- 100 g peas
- 4 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp honey (or agave syrup for vegan version)
- 1 tbsp lime juice
- Fresh cilantro for garnish
Instructions:
1. Cook the noodles according to package instructions, drain, and rinse under cold water.2. Cut the smoked pork (or tofu) into small pieces.
3. Julienne the cucumber, bell pepper, and carrot.
4. Combine all ingredients in a large bowl.
5. Prepare the dressing by mixing soy sauce, sesame oil, honey, and lime juice. Pour the dressing over the salad and mix well.
6. Garnish with fresh cilantro before serving.
