A delicious and nutritious soy protein curry, perfect for reducing food waste and embracing plant-based meals. This dish is easily customizable and packed with protein.

Ingredients

- 2 dl soy protein flakes
- 1.5 dl rice
- 1 onion
- 2 cloves garlic
- 1 red bell pepper
- 1 carrot
- 1 can coconut milk
- 2 tbsp curry paste
- 2 tbsp oil
- Salt and pepper to taste
- Fresh coriander for garnish (optional)

Instructions

1. Cook the rice according to the package instructions.
2. Peel and finely chop the onion and garlic. Peel and dice the bell pepper and carrot.
3. Heat the oil in a large skillet over medium heat. Add the onion and garlic, and sauté for about 5 minutes.
4. Add the bell pepper and carrot, and continue to sauté for another 5 minutes.
5. Stir in the soy protein flakes, curry paste, and coconut milk. Mix well and let simmer on low heat for about 10 minutes.
6. Season with salt and pepper to taste.
7. Serve the curry over the cooked rice and garnish with fresh coriander if desired.
