Spicy Chickpeas and Feta Bake

A delicious oven dish combining spicy chickpeas, tomatoes in two ways, and feta cheese. This dish is a tasty side or a lighter main course, and it's particularly enjoyable cold. Preparation Time: 50 minutes

Ingredients
- 200 g cooked chickpeas - 7 tbsp olive oil
- 3/4 tsp cinnamon
- 1/2 tsp turmeric
- 3/4 tsp paprika
- 2 tsp cumin
- 3/4 tsp ground coriander
- about 1.5 kg medium-sized tomatoes
- 1 large red onion (or yellow onion)
- 4 crushed garlic cloves
- 250-300 g feta cheese, cut into 3 cm pieces
- 15 basil leaves
Instructions
1. Heat 4 tablespoons of olive oil in a pan. Add the chickpeas and spices (cinnamon, turmeric, paprika, cumin, coriander). Season with salt. Sauté the chickpeas for 10 minutes, stirring occasionally. 2. Allow the chickpeas to cool. Grate one-third of the tomatoes and dice the rest. Combine the grated tomatoes and their juices.
3. Dice the onion and crush the garlic; add them to the tomato mixture. Add 3 tablespoons of olive oil, salt, and black pepper. Mix well.
4. Preheat the oven to 200 °C (400 °F).
5. (Optional) Place pieces of bread in a baking dish. Drizzle a marinade (200 ml olive oil, 100 ml red wine vinegar, salt, and black pepper) over the bread.
6. Spoon the tomato-onion mixture over the bread and evenly distribute the chickpeas on top.
7. Spread the feta pieces over the chickpeas, arrange the basil leaves, and drizzle an additional 3 tablespoons of olive oil on top.
8. Bake in the oven for 25 minutes, until the feta is beautifully colored.
