A delicious and refreshing creole fish dish that takes you on a flavor journey to Mauritius. Preparation time: 30 minutes. Serves: 4.Ingredients:
- 4 fish fillets (e.g., cod or sea bream)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 green chili, chopped
- 2 tomatoes, diced
- 1 tablespoon tomato paste
- 1 teaspoon curry powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh cilantro, chopped
- Juice of 1 lemon
Instructions:
1. Heat olive oil in a pan over medium heat. Add chopped onion and crushed garlic, and sauté for a few minutes.
2. Add the diced bell pepper and chopped chili. Cook for another 3-4 minutes until the peppers soften.
3. Stir in the diced tomatoes, tomato paste, curry powder, salt, and black pepper. Mix well and let it simmer for about 5 minutes.
4. Place the fish fillets on top of the sauce and cook covered for about 10-12 minutes, until the fish is cooked through.
5. Sprinkle fresh cilantro on top and squeeze lemon juice before serving. Serve with rice or fresh bread.
