A quick and easy vegetable pasta that's perfect for a weeknight dinner. Prep time is just 30 minutes and serves four.
Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- 1 tsp salt
- 1/2 tsp black pepper
- 50 g Parmesan cheese (optional)
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a little cooking water.
2. Heat the olive oil in a large pan over medium heat. Add the onion and garlic, and sauté until soft.
3. Add the bell pepper and zucchini to the pan. Cook for about 5-7 minutes until the vegetables are tender.
4. Stir in the cherry tomatoes, spinach, salt, and black pepper. Mix and cook for a few more minutes until the spinach has wilted.
5. Combine the cooked pasta with the vegetables. Add a little reserved cooking water if needed for a creamier texture.
6. Serve in bowls and sprinkle with Parmesan cheese and fresh basil.
