Ingredients:

- 800 g beef (e.g. chuck or brisket)
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 garlic cloves, crushed
- 2 tbsp ras el hanout spice blend
- 400 g crushed tomatoes
- 500 ml beef broth
- 200 g dried plums
- 2 carrots, sliced
- 1 bell pepper, chopped
- 1 boiled egg (optional for garnish)
- Salt and black pepper to taste
- Fresh parsley or coriander for garnish

Instructions:

1. Heat olive oil in a large skillet or tagine pot over medium heat. Add chopped onion and sauté until softened.
2. Add crushed garlic and cook for another minute.
3. Add beef and brown on all sides.
4. Sprinkle ras el hanout spice blend over the meat and mix well.
5. Add crushed tomatoes, beef broth, dried plums, carrots, and bell pepper. Stir all ingredients together.
6. Season with salt and black pepper. Let the stew simmer on low heat for about 10 minutes.
7. Transfer the pot to the oven at 160°C (320°F) and cook covered for about 1.5 hours or until the meat is tender.
8. Serve warm, garnished with boiled eggs and fresh herbs.
