This delicious marinade makes game meat juicy and flavorful. Allow it to marinate properly before cooking!

Ingredients

- 2 bay leaves
- 5 whole juniper berries
- 1 small parsnip
- 1 sprig of rosemary
- 2 bottles of beer
- 1 small celery root
- 10 whole white peppercorns
- 1 onion
- 2 dl oil
- 2 carrots

Instructions

1. Chop the vegetables (parsnip, celery, onion, carrots) into pieces a few centimeters in size.
2. Heat the oil in a pan and sauté the chopped vegetables until they are nearly tender.
3. Add the bay leaves, juniper berries, rosemary, and white peppercorns to the pan. Season with salt and pepper.
4. Let the vegetables cool to room temperature.
5. Once cooled, add the beers to the vegetables and mix well.
6. Place the game meat in the marinade and allow it to marinate in the refrigerator for 24 hours, turning the meat a few times during the marinating process.
