Kinkkupata with Saffron Rice

A delicious and hearty pork stew that pairs beautifully with saffron rice.
Preparation Time: 2.5-3 hours
Serving Size: 4-6 servings

Ingredients:

- 1 kg pork ham or other meat
- 3 tablespoons butter
- 1 onion
- 5 cloves garlic
- 1 red chili
- 1 red bell pepper
- 1 cinnamon stick
- 1 teaspoon crushed tomatoes
- 1 dl water
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- Cayenne pepper or dried chili to taste
- 2 teaspoons crème fraîche
- 1 dl white beans (in tomato sauce)

Instructions:

1. Bring the ham to room temperature and cut it into large chunks.
2. Sear the ham pieces in a generous amount of butter in a pan until browned. Season with salt and pepper.
3. Transfer the ham to a pot.
4. Chop the onion, garlic, chili, and bell pepper. Sauté them briefly in the pan, then add to the pot.
5. Place the pot over low heat and mix all ingredients together.
6. Add the crushed tomatoes and water. Bring to a boil, stir, and reduce the heat.
7. Let it simmer on low heat for about 2-2.5 hours, stirring occasionally.
8. Add the spices and white beans. Continue simmering for about 20 more minutes.
9. Taste and adjust seasoning with salt if needed.
10. Serve the stew with rice or saffron rice, finishing off with a dollop of crème fraîche.
