A delicious Malaysian chicken sauce bursting with tropical flavors; sweet coconut and the heat of chili. This thin sauce is perfect for spooning over rice.

Serving Size: 4 servings

Ingredients:

- 500 g chicken fillets
- 400 ml coconut milk
- 2 tbsp oil
- 1 onion, chopped
- 3 garlic cloves, crushed
- 1 red chili, finely chopped
- 1 tbsp fresh ginger, grated
- 2 tbsp soy sauce
- 1 tbsp sugar
- Juice of 1 lime
- Salt and pepper to taste
- Fresh coriander for garnish

Instructions:

1. Heat the oil in a large skillet over medium heat. Add the chopped onion and sauté until soft.
2. Add the crushed garlic, chopped chili, and grated ginger. Cook for a few more minutes.
3. Add the chicken fillets and cook until golden brown.
4. Pour in the coconut milk and mix well. Add the soy sauce, sugar, and lime juice.
5. Let the sauce simmer on low heat for about 15 minutes until the chicken is cooked through and the sauce thickens slightly. Season with salt and pepper.
6. Serve hot, garnished with fresh coriander.
