Paneer Kofta with Creamy Tomato Sauce

Ingredients:

For the Kofta:
- 250 g potatoes
- 225 g paneer cheese
- 0.5 dl cashew nuts
- 1 cm piece fresh ginger
- 0.5 dl fresh coriander or parsley
- 1 small chili or half of a large one
- 1 tbsp garam masala
- 1.5 tbsp cornstarch
- 0.5 tsp salt
For the Creamy Tomato Sauce:
- 2 onions
- 3 garlic cloves
- 2 cm piece fresh ginger
- 1 dl cashew nuts
- 400 g crushed tomatoes
- 2-3 dl water
- 2 tbsp butter or vegetable oil
- 2 dl (oat) cooking cream
- 0.5 tsp cinnamon
- 1 tsp ground coriander
- 0.5 tsp ground cardamom
- 2.5 tsp cumin
- 0.25 tsp cayenne pepper
- 0.25 tsp black pepper
- Salt to taste
Additionally:
- Basmati rice

Instructions:

1. Prepare the Kofta:
- Peel, chop, and boil potatoes until soft. Mash them with a fork.
- Grate paneer or finely chop it with a knife.
- Chop the cashew nuts.
- Peel and grate the ginger. Finely chop the chili.
- Mix all the ingredients in a bowl, adding salt, garam masala, and cornstarch.
- Refrigerate the mixture for about 30 minutes to firm up.
- Roll the mixture into equal-sized balls and brush with vegetable oil.
- Bake in the oven at 200°C for about 30 minutes or in an air fryer at 180°C for about 10 minutes.
2. Prepare the Tomato Sauce:
- Peel and finely chop the onions and garlic. Grate the ginger.
- Heat butter in a pan and add onions and ginger. Sauté until the onions soften.
- Add cashew nuts, crushed tomatoes, and 1 dl of water. Blend the mixture until smooth.
- Pour the puree back into the pan, add all the spices, and sauté briefly. Add more water and let it simmer on low heat for about 30 minutes.
- Finally, stir in the cream and season with salt.
3. Cook the Basmati Rice:
- Rinse the rice and cook according to package instructions.
4. Serve:
- Enjoy the koftas in the creamy tomato sauce alongside basmati rice. You can garnish with crushed cashew nuts and fresh coriander.
