A delicious and quick chicken pasta dish that’s perfect for busy weeknights. The lemon sauce adds freshness and flavor. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., fusilli or penne)
- 400 g chicken breast fillets
- 2 tbsp olive oil
- 2 garlic cloves, minced
- Juice and zest of 1 lemon
- 200 ml cream
- Salt and pepper to taste
- 50 g grated Parmesan cheese
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a bit of the cooking water.
2. Cut the chicken breast into small strips and season with salt and pepper.
3. Heat olive oil in a large pan over medium heat. Add the chicken strips and cook until golden brown and cooked through, about 5-7 minutes.
4. Add the minced garlic to the pan and sauté for another minute until fragrant.
5. Squeeze in the lemon juice and add the lemon zest and cream to the pan. Stir and let the sauce simmer on low heat for a few minutes.
6. Toss the cooked pasta with the sauce. If the sauce is too thick, add a little reserved pasta water to achieve the desired consistency.
7. Serve the pasta topped with Parmesan cheese and fresh basil.
