A delightful cheesecake served beautifully in glasses, perfect for Mother's Day or any special occasion. Preparation Time: 20 minutes + chilling
Serving Size: 4 servings
Ingredients:
- 200 g digestive biscuits - 100 g butter
- 400 g cream cheese
- 100 g sugar
- 1 tsp vanilla sugar
- 2 dl heavy cream
- 100 g berries (e.g., strawberries or blueberries)
Instructions:
1. Crush the digestive biscuits and melt the butter. Mix the biscuit crumbs with the melted butter.2. Divide the biscuit mixture among the bottoms of four glasses and press down firmly.
3. In a bowl, beat the cream cheese, sugar, and vanilla sugar until smooth.
4. In a separate bowl, whip the heavy cream to soft peaks, then gently fold it into the cream cheese mixture.
5. Spoon the cheesecake mixture over the biscuit bases in the glasses.
6. Allow the cheesecakes to chill in the refrigerator for at least 2 hours.
7. Top with berries before serving.
