Ingredients:
- 400 g white fish (e.g., pike or perch) - 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 100 ml white wine (e.g., Riesling)
- 200 ml fish stock
- 100 ml cream
- Juice of 1 lemon
- 1 tsp salt
- ½ tsp black pepper
- Fresh parsley, chopped for garnish
Instructions:
1. Heat the olive oil in a large skillet over medium heat. 2. Add the chopped onion and crushed garlic, and sauté for about 5 minutes until softened.
3. Pour the white wine into the skillet and let it simmer for a few minutes until the alcohol evaporates.
4. Add the fish stock and cream, stirring well to combine.
5. Season the mixture with lemon juice, salt, and black pepper.
6. Add the fish pieces to the sauce and cook for about 10 minutes until the fish is cooked through.
7. Garnish the servings with fresh parsley before serving.
