Ingredients:
- 200 g gravlax
- 150 g Hailuoto sea trout roe
- 250 g summer herring
- 100 ml champagne
- 1 dl sour cream
- 1 dl finely chopped red onion
- 1 dl fresh herbs (such as dill and parsley)
- Freshly ground black pepper
- 1 lemon
Instructions:
1. Slice the gravlax into thin pieces and arrange them on a plate.
2. Add the sea trout roe next to the gravlax.
3. Place the summer herring on the plate surrounding the gravlax and roe.
4. Prepare the sauce by mixing the sour cream, chopped red onion, fresh herbs, and black pepper.
5. Pour the sauce over the fish servings.
6. Squeeze lemon juice over the servings and serve with champagne.
