Spinach Soup (Pinaattikeitto)

A creamy and nutritious spinach soup that's perfect for a light meal.
Preparation Time: 25 minutes
Serving Size: 4 servings
Ingredients:
- 400 g fresh spinach
- 1 onion
- 2 garlic cloves
- 1 potato
- 1 liter vegetable broth
- 200 ml cream
- Salt and pepper to taste
- Oil for sautéing
Instructions:
1. Finely chop the onion and garlic. Peel and dice the potato.
2. Heat oil in a pot and sauté the onion and garlic until soft.
3. Add the diced potato and vegetable broth to the pot. Cook for about 10 minutes, until the potatoes are tender.
4. Add the fresh spinach and cook for another 5 minutes, until the spinach wilts.
5. Blend the soup with an immersion blender until smooth.
6. Stir in the cream and season with salt and pepper. Heat the soup again, but do not boil.
7. Serve hot, preferably with bread.
