Creamy Spinach Soup with Whole Grain Croutons

Serving Size: 4 servings
Ingredients:
- 300 g fresh spinach
- 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl cream
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 slices whole grain bread
Instructions:
1. Peel and finely chop the onion and garlic.
2. Heat the olive oil in a pot and sauté the onion and garlic until they are soft.
3. Add the rinsed spinach to the pot and cook for a few minutes until it wilts.
4. Pour in the vegetable broth and let it boil for about 10 minutes.
5. Blend the soup with an immersion blender until smooth.
6. Stir in the cream and season with salt and pepper. Heat the soup again.
7. Prepare the croutons by toasting the whole grain bread slices in a pan until golden brown and crispy.
8. Serve the soup hot, topped with croutons. Enjoy!
