Spinach Soup (Pinaattikeitto)

A creamy and nutritious spinach soup that's perfect for a light meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g fresh spinach
- 1 liter vegetable broth
- 2 potatoes
- 1 onion
- 2 garlic cloves
- 200 ml cream
- Salt and pepper to taste
- Butter for sautéing
Instructions:
1. Peel and dice the potatoes into small cubes.
2. Finely chop the onion and garlic.
3. Heat butter in a pot and sauté the onion and garlic until soft.
4. Add the potato cubes to the pot and pour in the vegetable broth. Bring to a boil and simmer for about 15 minutes, until the potatoes are tender.
5. Add the fresh spinach to the pot and cook for a few more minutes until the spinach wilts.
6. Blend the soup until smooth using an immersion blender.
7. Stir in the cream and season with salt and pepper. Heat the soup again but do not boil.
8. Serve immediately, optionally garnished with a dollop of cream or yogurt.
