A creamy and nutritious spinach soup perfect for a light meal.

Ingredients:
- 400 g fresh spinach
- 1 liter chicken or vegetable broth
- 1 onion
- 2 garlic cloves
- 2 potatoes
- 200 ml cream
- Salt and pepper to taste
- Boiled eggs for serving
Instructions:
1. Peel and chop the onion, garlic, and potatoes.
2. In a pot, heat a splash of oil and sauté the onion and garlic for a few minutes until translucent.
3. Add the potatoes and broth, and cook until the potatoes are tender.
4. Stir in the fresh spinach and cook for a few more minutes until wilted.
5. Blend the soup using an immersion blender or a regular blender until smooth.
6. Return the soup to the pot, add the cream, and season with salt and pepper.
7. Heat the soup gently once more, but do not boil.
8. Serve the soup with boiled eggs on the side.
