Spinach Soup (Pinaattikeitto)

A delicious and creamy spinach soup that's perfect for a light meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g fresh spinach
- 1 onion
- 2 garlic cloves
- 1 potato
- 1 liter vegetable broth
- 200 ml cream
- Salt to taste
- Black pepper to taste
- Butter for sautéing
Instructions:
1. Peel and chop the onion, garlic, and potato.
2. Heat butter in a pot and add the onion and garlic. Sauté until they are soft.
3. Add the diced potato and vegetable broth to the pot. Cook for about 15 minutes, until the potatoes are tender.
4. Add the fresh spinach to the pot and cook for a few more minutes until the spinach has wilted.
5. Blend the soup with an immersion blender until smooth.
6. Stir in the cream and season with salt and black pepper. Heat the soup again, but do not boil.
7. Serve warm and enjoy!
