A delicious Finnish macaroni casserole with ground meat and mixed vegetables. Preparation Time: 15 minutes
Cooking Time: 40 minutes
Serving Size: 4-6 servings
Ingredients:
- 2 tbsp tomato paste
- 700 g lean ground beef
- 5 dl skim lactose-free milk
- 3 large eggs
- 200 g Torino dark protein pasta
- 250 g mixed vegetables (carrot, cauliflower, peas, beans)
- Olive oil (for frying)
Instructions:
1. Cook the protein pasta in salted water until almost tender, drain and set aside.
2. In a hot pan, brown the ground beef until cooked. Add chopped onion and sauté for a few more minutes.
3. Stir in the tomato paste and mixed vegetables. Allow to simmer for a few minutes.
4. In a bowl, crack the eggs and beat them lightly. Add the milk and mix well.
5. Combine the pasta, meat mixture, and egg-milk mixture in a large bowl. Stir until evenly blended.
6. Pour the mixture into a greased baking dish.
7. Bake at 180°C (350°F) for about 30-40 minutes, or until the top is golden brown.
8. Let it cool slightly before serving. Enjoy!
