A delicious peanut chicken recipe combining tender chicken pieces with colorful vegetables and rice. Perfect for a weekend dinner or a quick weeknight meal.

Ingredients:
- 0.5 dl satay sauce
- 2 dl rice
- Fresh ginger
- 2 spring onions
- 500 g skinless chicken fillets
- Juice of 0.5 lime
- 2 carrots
- Canola oil
Instructions:
1. Cut the chicken fillets lengthwise into three pieces.
2. Squeeze lime juice over the chicken pieces and toss them in the satay sauce. Let them marinate for about 30 minutes.
3. Thread the marinated chicken pieces onto skewers.
4. Grill or bake in an oven at 225°C (437°F) under the grill for 15-20 minutes or until the chicken is cooked through.
5. Cook the rice according to the package instructions. Add finely chopped fresh ginger, chopped spring onions, and sliced carrots to the rice. Sauté the mixture briefly in canola oil before serving.
6. Serve the peanut chicken with the vegetable rice.
