Ingredients:
- 2 dl gluten-free flour - 1 dl rolled oats
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 2 dl peanut butter
- 2 dl milk (or plant-based milk)
- 2 eggs
- 1 tsp vanilla extract
- Sliced apples for cooking
- 1 dl applesauce
- 1 tbsp chia seeds
- Vanilla powder
- Fresh raspberries
- Oat Hoops cereal (for garnish)
Instructions:
1. In a bowl, mix together the gluten-free flour, rolled oats, sugar, baking powder, and salt. 2. Add the peanut butter, milk, eggs, and vanilla extract to the dry ingredients and mix until smooth.
3. Preheat the waffle iron and lightly grease it.
4. Pour batter onto the waffle iron and cook according to the manufacturer's instructions until golden brown.
5. In a pan, cook the sliced apples with a sprinkle of vanilla powder until soft.
6. Combine the applesauce and chia seeds, letting it sit for about 10 minutes to thicken.
7. Serve the waffles topped with the cooked apple slices, apple-chia jam, fresh raspberries, and a sprinkle of Oat Hoops cereal.
