These delicious and fluffy vegan pancakes are the perfect breakfast treat for Sunday mornings. Preparation Time: 20 minutes
Serving Size: 4 pancakes
Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup plant-based milk (such as oat or almond milk)
- 1/4 cup whipped aquafaba (chickpea brine)
- 2 tablespoons vegetable oil (such as canola or coconut oil)
- 1 teaspoon vanilla extract
Instructions:
1. In a bowl, mix together the flour, sugar, baking powder, and salt.
2. Add the plant-based milk, whipped aquafaba, vegetable oil, and vanilla extract. Stir the batter gently until smooth.
3. Heat a non-stick skillet over medium heat.
4. Pour batter onto the skillet to form pancakes of your desired size.
5. Cook the pancakes for about 2-3 minutes, until bubbles form on the surface, then flip them carefully.
6. Cook for another 1-2 minutes until the pancakes are golden brown.
7. Serve with maple syrup, berries, or your favorite toppings.
