Ingredients:

- 4 Eggs
- 2 English muffins
- 200 g Smoked salmon or ham
- 50 g Butter
- 1 tbsp Lemon juice
- 1 Egg (for hollandaise sauce)
- 1 tbsp Water (for hollandaise sauce)
- Salt and pepper to taste
- 4 American pancakes
- Maple syrup (optional)
- Berries (e.g., strawberries and blueberries)
- Cream (for whipped cream)

Instructions:

1. Boil water in a pot and add a pinch of salt. Carefully crack the eggs into the pot and poach for 3-4 minutes until the whites are set but the yolks are still runny.
2. Toast the English muffins and place the smoked salmon or ham on top of the muffins.
3. Prepare the hollandaise sauce: Melt the butter in a small saucepan. In a bowl, mix the egg yolk and water. Heat the mixture over a double boiler, stirring continuously until it thickens. Gradually add the melted butter while stirring. Add lemon juice, salt, and pepper.
4. Place the poached eggs on top of the muffins and drizzle the hollandaise sauce over them.
5. Serve the American pancakes with berries and maple syrup on the side.
