Delicious and fluffy vegan pancakes perfect for breakfast or brunch.

Serving Size: 4 servings
Ingredients:
- 2 dl all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- ¼ tsp salt
- 2 dl plant-based milk (such as soy or oat milk)
- 2 tbsp vegetable oil
- 1 tsp vanilla extract (optional)
Instructions:
1. In a mixing bowl, combine all-purpose flour, sugar, baking powder, and salt.
2. Add plant-based milk, vegetable oil, and vanilla extract. Mix until the batter is smooth, but do not overmix.
3. Heat a skillet over medium heat and add a little oil.
4. Pour the batter onto the skillet to form pancakes of your desired size.
5. Cook the pancakes for about 2-3 minutes on each side until golden brown and fluffy.
6. Serve warm with berries, syrup, or yogurt as toppings.
