A delicious and fluffy vegan pancake recipe perfect for breakfast! Preparation Time: 15 minutes
Serving Size: 2-3 servings
Ingredients:
- 1.5 dl flour (wheat or gluten-free)
- 1 dl plant-based milk (e.g., oat or almond milk)
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tbsp vegetable oil (e.g., canola or coconut oil)
- 1 tsp vanilla extract (optional)
Instructions:
1. In a bowl, mix the dry ingredients: flour, sugar, baking powder, and salt.
2. Add the plant-based milk, vegetable oil, and vanilla extract. Stir until the batter is smooth.
3. Heat a frying pan over medium heat and add a little oil.
4. Pour batter onto the pan to form pancakes of your desired size.
5. Cook until bubbles form on the surface and the edges look cooked (about 3-4 minutes).
6. Carefully flip the pancake and cook the other side for another 2-3 minutes.
7. Serve with your favorite syrup, fruits, or berries. Enjoy!
