A delicious and healthy twist on pizza using sweet potatoes as the base, topped with savory Härkis and vegetables.

Serving Size: 2-3 servings
Ingredients:
- 2 sweet potatoes
- Olive oil
- Salt
- Pepper
- 1 small onion
- 1 cup sun-dried tomatoes in oil
- 2 carrots
- 1 package Härkis (plant-based protein)
- 1 tsp paprika powder
- ½ tsp Cajun seasoning
- Grated cheese
- Oat fraiche (optional)
Instructions:
1. Wash the sweet potatoes and slice them into 1-inch thick rounds.
2. Arrange the sweet potato slices on a baking sheet, drizzle with olive oil, and season with salt and pepper.
3. Bake the sweet potatoes in a preheated oven at 200°C (400°F) for 10-15 minutes.
4. Finely chop the onion and sun-dried tomatoes.
5. Sauté the onion and sun-dried tomatoes in a pan with the oil from the tomatoes until softened.
6. Chop the carrots in a blender and add them to the pan along with the Härkis.
7. Stir in the paprika, Cajun seasoning, salt, and pepper. Mix well.
8. Spoon the Härkis mixture onto the sweet potato rounds and sprinkle grated cheese on top of each.
9. Bake the pizzas in the oven for an additional 5 minutes, or until the cheese is melted.
10. Serve the mini pizzas warm, optionally with oat fraiche on the side.
