Spaghetti Aglio e Olio

A simple Italian pasta dish made with garlic, olive oil, and chili flakes. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- Spaghetti - 400g
- Olive oil - 1/2 cup
- Garlic - 6 cloves, thinly sliced
- Red chili flakes - 1 teaspoon
- Fresh parsley - 1/4 cup, chopped
- Salt - to taste
- Grated Parmesan cheese - for serving (optional)
Instructions:
1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden brown, being careful not to burn it.
3. Add the red chili flakes and sauté for another 30 seconds.
4. Add the drained spaghetti to the skillet, tossing to coat it in the garlic oil.
5. If needed, add a bit of the reserved pasta water to loosen the sauce.
6. Stir in the chopped parsley and season with salt to taste.
7. Serve hot, topped with grated Parmesan cheese if desired.
