Ingredients:
- 200 g fresh spinach - 150 g cherry tomatoes
- 1 cucumber
- 1 avocado
- 100 g feta cheese
- 50 g pine nuts
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse and dry the spinach. Place it in a large salad bowl.2. Halve the cherry tomatoes and add them to the bowl.
3. Peel the cucumber and cut it into strips or cubes, then add to the salad.
4. Cut the avocado in half, remove the pit, and peel. Dice the avocado and add it to the salad.
5. Crumble the feta cheese over the salad.
6. Lightly toast the pine nuts in a dry pan until golden brown and sprinkle them on top of the salad.
7. Mix the olive oil and balsamic vinegar together, then add salt and pepper to taste.
8. Drizzle the dressing over the salad and gently toss all the ingredients together before serving.
