Ingredients:
- 4 salmon fillets - Salt
- Black pepper
- Juice of 1/2 lemon
- Chili sauce to taste
- 2 zucchinis
- 1 fennel bulb
- 2 tablespoons olive oil
- Juice of 1/2 lemon (additional)
- Lemon zest
- 1 teaspoon sugar
- 200 g frozen peas
- 1 cucumber (diced)
- 2 tablespoons olive oil (additional)
- 2 tablespoons white wine vinegar
- Salt and sugar to taste
Instructions:
1. Season the salmon fillets with salt, black pepper, the juice of half a lemon, and chili sauce. Let them marinate briefly.2. Chop the zucchinis and fennel into large wedges. Spread them out in a shallow baking dish.
3. Drizzle olive oil and the juice of half a lemon over the vegetables. Season with salt, black pepper, lemon zest, and sugar. Toss to combine well.
4. Place the salmon fillets on top of the vegetables and bake in a preheated oven at 200°C (392°F) for about 20 minutes.
5. In a bowl, mix the peas and diced cucumber. Season with olive oil, white wine vinegar, salt, and sugar.
6. Serve the salmon fillets alongside the roasted vegetables.
