A delicious salmon soup made with fresh ingredients and rich cream. Perfect for spring outings and family gatherings. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2-3 (250 g) potatoes- 1 bag (250 g) vegetable strips
- 6 dl fish stock
- 300 g salmon fillet (cubed)
- 2 dl heavy cream
- 1 onion (finely chopped)
- 1 tsp salt
- 1/2 tsp black pepper
- Fresh dill (for garnish)
Instructions:
1. Peel and cube the potatoes.2. In a pot, heat the fish stock and add the cubed potatoes and vegetable strips. Cook for about 10 minutes until the potatoes are almost tender.
3. Add the chopped onion and salmon cubes to the soup. Let it simmer on low heat for about 5-7 minutes.
4. Pour in the heavy cream and season with salt and black pepper. Heat the soup for a moment, but do not bring it to a boil again.
5. Serve the soup garnished with fresh dill.
