A delicious and easy-to-make salmon soup, perfect for utilizing leftover salmon.
Preparation Time: 30 minutes
Serving Size: 2-3 servings

Ingredients:

- 3-4 potatoes, diced
- 4 dl water
- 200 g cooked salmon, in large pieces
- 2 dl milk
- 1 tsp salt (e.g., Herbamare)
- 1/2 tsp black pepper
- 1 tsp dried chives
- 1 tsp onion powder
- 1-2 tbsp dried and/or fresh dill
- A small knob of butter
- (Optional) a few frozen shrimp

Instructions:

1. In a pot, bring the diced potatoes to a boil in the water.
2. Add the seasonings (salt, pepper, chives, onion powder, and dill) to the potatoes.
3. Once the potatoes are almost cooked, add the milk to the pot. Drain excess water if the broth is too watery.
4. Wait for the soup to come to a gentle boil again, then add the pieces of salmon. Let it simmer for 2-3 minutes until the salmon is heated through.
5. Taste and adjust the seasoning, adding more spices or a knob of butter if desired.
6. You can add shrimp directly to the bowls before serving or stir them into the soup.
7. Serve the soup with fresh rye bread.
