A vibrant and flavorful chimichurri sauce made with lovage and fresh ingredients, perfect for grilled meats or potato wedges.

Ingredients:

- 200 ml rapeseed oil or olive oil
- 200 ml chopped lovage
- 3-4 tablespoons sherry vinegar or red wine vinegar (or lemon juice)
- 4 large cloves of garlic, minced
- 1-2 chilies, finely chopped
- Just under 100 ml chopped fresh marjoram or 2-3 teaspoons dried oregano
- Salt, to taste
- Freshly ground black pepper

Instructions:

1. Finely chop the lovage, garlic, and chili with a knife.
2. Combine the chopped ingredients in a bowl.
3. Add the oil and vinegar (or lemon juice) to the mixture.
4. Season with salt and black pepper, and mix well.
5. Allow the sauce to marinate in the refrigerator for at least 15-30 minutes before serving.
6. Taste and adjust seasoning with more salt if needed.
