A delicious and hearty soup perfect as an appetizer or a light main course. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g mushrooms
- 1 onion
- 2 garlic cloves
- 2 tablespoons butter
- 1 liter vegetable broth
- 200 ml cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the onion and garlic.
2. Clean the mushrooms and slice them.
3. Heat the butter in a pot and sauté the onion and garlic until soft.
4. Add the sliced mushrooms and cook for a few minutes until they start to soften.
5. Pour the vegetable broth into the pot and let the soup simmer for about 15 minutes.
6. Blend the soup with an immersion blender or in a regular blender until smooth.
7. Stir in the cream and warm the soup for a moment. Season with salt and pepper.
8. Serve the soup hot, garnished with fresh parsley.
