Serving Size: 2 servings
Ingredients:
- 200 g pasta (e.g., spaghetti)
- 100 g bacon or guanciale
- 2 large eggs
- 50 g Parmesan cheese (grated)
- 1 garlic clove (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. Meanwhile, chop the bacon or guanciale into small pieces and fry them in a pan over medium heat until crispy.
3. Add the minced garlic to the bacon and sauté for another minute until fragrant.
4. In a bowl, whisk the eggs and mix in the grated Parmesan cheese. Season with salt and black pepper.
5. Once the pasta is cooked, drain it and reserve a little cooking water. Add the pasta to the pan with the bacon and garlic.
6. Remove the pan from heat and quickly stir in the egg mixture with the pasta. Add reserved cooking water as needed to create a creamy sauce.
7. Serve immediately, garnished with fresh parsley and extra Parmesan cheese. Enjoy!
