Mexican Meatballs in Tomato Sauce

Ingredients:
- 500 g ground beef (or pork)
- 1 dl breadcrumbs
- 1 dl milk
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder (or to taste)
- 400 g crushed tomatoes
- 1 tbsp olive oil
- 1 tbsp sugar
- Fresh coriander for garnish (optional)
Instructions:
1. In a large bowl, mix the ground meat, breadcrumbs, milk, onion, garlic, egg, salt, black pepper, cumin, paprika, and chili powder until well combined.
2. Shape the mixture into evenly sized meatballs.
3. Heat the olive oil in a skillet over medium heat and cook the meatballs until they are nicely browned on all sides.
4. Transfer the browned meatballs to a baking dish.
5. In a separate bowl, combine the crushed tomatoes and sugar. Pour the sauce over the meatballs.
6. Bake in a preheated oven at 180°C (350°F) for about 25-30 minutes, or until the meatballs are fully cooked.
7. Serve the meatballs garnished with fresh coriander if desired. Enjoy!
