A simple and tasty pasta salad, perfect for summer picnics or lunch. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 250 g pasta (e.g., penne or fusilli)
- 1 bell pepper (red or yellow), diced
- 1 cucumber, diced
- 150 g cherry tomatoes, halved
- 100 g feta cheese, crumbled
- 100 ml olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and let it cool.
2. Prepare the vegetables: dice the bell pepper and cucumber, and halve the cherry tomatoes.
3. In a large bowl, combine the cooled pasta, bell pepper, cucumber, cherry tomatoes, and feta cheese.
4. In a separate bowl, mix the olive oil, balsamic vinegar, salt, and pepper. Pour the dressing over the pasta mixture and toss well.
5. Allow the salad to marinate in the refrigerator for about 15 minutes before serving.
6. Garnish with fresh basil before serving.
