A delightful twist on the classic French sandwich, this Croque Madame Bread Pudding combines crispy bread, savory ham, and creamy cheese for a satisfying dish.
Preparation Time: 1 hour (plus overnight resting)
Serving Size: 4 servings
Ingredients:
- Approximately 150 g stale white bread (such as baguette)
- 2 tbsp olive oil
- 1.5 dl heavy cream
- 3 tbsp water
- 3 eggs
- 0.5 tbsp Dijon mustard
- A pinch of salt
- A couple of grinds of black pepper
- 100 g Gruyère cheese, grated
- Approximately 80 g smoked ham, chopped
- 3 sprigs of fresh thyme
- For topping: 2 eggs and some grated Parmesan cheese
Instructions:
1. The night before, cut the bread into 2 cm cubes.
2. In a skillet, toast the bread cubes in olive oil until crispy.
3. Grease a baking dish.
4. In a bowl, whisk together the heavy cream, water, and eggs. Add the Dijon mustard, salt, and pepper.
5. Tear or chop the ham into bite-sized pieces and finely chop the thyme leaves.
6. Layer the baking dish with a layer of bread cubes, followed by thyme, half of the grated Gruyère cheese, and ham. Repeat the layers.
7. Pour the cream-egg mixture over the top and cover the dish with foil. Refrigerate overnight or for at least 4 hours.
8. Take the dish out of the fridge an hour before baking to bring it to room temperature. Preheat the oven to 175°C (350°F).
9. Bake the dish covered with foil for 20 minutes.
10. Increase the heat to 200°C (400°F), crack two eggs on top, and sprinkle with Parmesan cheese.
11. Bake for another 20 minutes uncovered.
12. Let it rest for about 5 minutes before serving.
