Traditional Finnish sweet buns enjoyed especially during Shrove Tuesday. These soft and sweet buns are typically filled with almond paste and whipped cream. Preparation Time: 1 hour + rising time
Serving Size: About 12 buns
Ingredients:
- 500 g all-purpose flour
- 2 dl milk
- 50 g fresh yeast
- 75 g sugar
- 1 tsp salt
- 1 tsp cardamom
- 100 g butter
- 1 egg (for brushing)
- 200 g almond flour (for filling)
- 100 g sugar (for almond filling)
- 2 dl heavy cream (for filling)
Instructions:
1. Warm the milk to body temperature and dissolve the fresh yeast in it.
2. In a bowl, mix the flour, sugar, salt, and cardamom.
3. Add the yeast mixture to the flour and knead the dough.
4. Incorporate the softened butter and continue kneading until the dough is elastic.
5. Cover the dough with a cloth and let it rise for about 1 hour.
6. Prepare the almond filling by mixing almond flour and sugar together.
7. Roll out the dough to about 1 cm thick and cut into circles.
8. Place a spoonful of almond filling in the center of each circle and shape the buns into balls.
9. Place the buns on a baking sheet lined with parchment paper and let them rise for an additional 30 minutes.
10. Brush the buns with beaten egg and bake at 200°C (392°F) for about 12-15 minutes.
11. Allow to cool and fill with whipped cream before serving.
