Ingredients:
- 1 medium carrot, grated
- 1 zucchini, grated
- 1 cup chickpeas, rinsed and mashed
- 1 cup rolled oats
- 1/2 cup finely chopped onion
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1 egg (or plant-based substitute)
- Oil for frying
Instructions:
1. In a large bowl, combine the grated carrot, zucchini, mashed chickpeas, and chopped onion.
2. Add the rolled oats, minced garlic, salt, black pepper, paprika, and oregano. Mix well.
3. Stir in the egg until all ingredients are well combined.
4. Form the mixture into patties, about 1/2 cup per patty.
5. Heat oil in a skillet over medium heat and fry the patties for about 4-5 minutes on each side, until golden brown.
6. Serve warm, for example, with a salad or whole grain bread.
