A delicious vegetarian lasagna made with oat mince, perfect for a weeknight dinner. Rich flavors and layered texture make it irresistible!

Ingredients:

- 300 g oat mince
- 9-12 lasagna sheets
- 1 large onion, chopped
- 2-3 garlic cloves, crushed
- 1 bell pepper, diced
- 2 carrots, grated
- 400 g crushed tomatoes
- 200 g mozzarella cheese, grated
- 100 ml cream
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon oregano
- 1 teaspoon basil

Instructions:

1. Heat olive oil in a pan and sauté the onion, garlic, and bell pepper until soft.
2. Add oat mince to the pan and cook for a few minutes until slightly browned.
3. Stir in the grated carrots, crushed tomatoes, salt, black pepper, oregano, and basil. Let simmer for 10 minutes.
4. Preheat the oven to 180°C (350°F).
5. Grease a baking dish and start layering: first, spread a layer of the oat mince mixture, then add lasagna sheets, a layer of cream, and finally a layer of mozzarella cheese.
6. Continue layering until all ingredients are used, finishing with a layer of cheese on top.
7. Bake the lasagna in the oven for about 30 minutes until the cheese is golden brown.
8. Allow to rest for a moment before serving.
