A delicious and nutritious alternative to traditional lasagna, featuring sweet potatoes for added flavor and color. Perfect for a weeknight dinner or special occasion. Preparation Time: 1 hour
Serving Size: 4-6 servings
Ingredients:
- 2 tbsp olive oil
- 50 ml Parmigiano Reggiano cheese (grated)
- 50 ml all-purpose flour
- 500 ml mild shredded cheese (mozzarella or Lapin cheese)
- 1 liter hot 1% milk
- 1 tsp salt
- ½ tsp pepper
- A pinch of cayenne pepper
- A generous pinch of nutmeg
- 50 ml vegetable oil or butter
- 8 lasagna noodles
- 1.5 kg sweet potatoes (cubed and cooked)
Instructions:
1. Heat olive oil in a frying pan and add the cooked sweet potatoes. Sauté until the sweet potatoes are slightly golden brown. Remove from the pan and set aside.
2. Prepare the cheese sauce: Heat vegetable oil or butter in a pot. Add the flour and stir until the mixture turns golden brown.
3. Gradually add the hot milk to the mixture while continuously stirring until the sauce thickens.
4. Season the sauce with salt, pepper, cayenne pepper, and nutmeg. Add the shredded cheese and stir until melted.
5. Grease a lasagna dish and layer the bottom with lasagna noodles. Add a layer of sweet potatoes followed by cheese sauce. Repeat layers until all ingredients are used, finishing with cheese sauce on top.
6. Sprinkle Parmigiano Reggiano cheese on top.
7. Bake in a preheated oven at 180°C (350°F) for about 30-40 minutes, until the top is beautifully golden brown.
