A creamy and comforting sweet potato soup perfect for chilly days. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2-3 sweet potatoes
- 2 cloves of garlic
- 1 onion
- 4 cups of water
- 2 cups of heavy cream
- Salt to taste
- Lemon pepper to taste
Instructions:
1. Peel and chop the sweet potatoes, garlic cloves, and onion.
2. In a pot, heat a little oil and sauté the onion and garlic for a few minutes until fragrant.
3. Add the sweet potatoes to the pot and pour in the water.
4. Bring to a boil and cook until the sweet potatoes are tender, about 15-20 minutes.
5. Use an immersion blender or a regular blender to puree the soup until smooth.
6. Stir in the heavy cream and season with salt and lemon pepper.
7. Heat the soup once more before serving.
8. Serve warm and enjoy!
