Sweet Potato and Ground Beef Mash

Serving Size: 4 servings
Ingredients:
- 400 g ground beef
- 2 medium sweet potatoes
- 2 tbsp olive oil
- 2 dl water
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions:
1. Peel and cube the sweet potatoes.
2. Boil the sweet potato cubes in salted water for about 15-20 minutes, until tender.
3. Heat the olive oil in a skillet over medium heat. Add the ground beef and cook until browned and fully cooked.
4. Stir the cooked sweet potatoes and thyme into the browned beef. Mix well.
5. Mash the mixture until smooth using an immersion blender. Add more water if needed to reach desired consistency.
6. Season with salt and pepper to taste.
7. Serve warm.
