A delicious sweet potato bean soup combining nutritious sweet potatoes and protein-rich beans, perfect for busy days. Preparation time is only 30 minutes, and it serves four.
Ingredients:
- 500 g sweet potatoes
- 1 can (400 g) white beans
- 1 onion
- 2 garlic cloves
- 1 liter vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon curry powder
- Salt and pepper to taste
- Fresh cilantro (optional)
Instructions:
1. Peel and cube the sweet potatoes. Chop the onion and garlic.
2. Heat olive oil in a pot and sauté the onion and garlic until softened.
3. Add the sweet potato cubes and curry powder, mixing well.
4. Pour the vegetable broth into the pot and bring to a boil. Reduce heat and simmer for about 15-20 minutes, until the sweet potatoes are tender.
5. Add the drained white beans to the soup and blend everything using an immersion blender or in a regular blender until you reach your desired consistency.
6. Season with salt and pepper to taste. Reheat the soup if it has cooled down too much.
7. Serve the soup garnished with fresh cilantro.
