A delightful gluten-free Christmas treat that combines sweet date filling with a delicious crust. Perfect for serving alongside mulled wine!

Serving Size: 12 pieces

Ingredients:

- 100 g butter
- 100 g gluten-free flour blend
- 50 g rice flour
- 50 g chickpea flour
- 50 g sugar
- 1 egg
- 200 g dried dates
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tbsp lemon juice
- A pinch of salt

Instructions:

1. Melt the butter and let it cool.
2. In a bowl, mix the gluten-free flour blend, rice flour, chickpea flour, sugar, cinnamon, nutmeg, and salt.
3. Add the melted butter and the egg to the flour mixture. Stir until a smooth dough forms.
4. Cover the dough with plastic wrap and let it rest in the fridge for about 30 minutes.
5. Chop the dates into small pieces and mix them with lemon juice in a bowl.
6. Roll out the dough into a thin sheet and cut out circles that fit into a muffin tin.
7. Place the dough circles into the muffin tin and fill each with the date mixture.
8. Cut small pieces of dough to create toppings and place them on top of the filling.
9. Bake at 180°C (356°F) for about 20-25 minutes until the pies are golden brown.
10. Allow to cool before serving.
