Larb Gai - Salad Tacos

A refreshing and flavorful dish made with soy protein and fresh herbs, served in crisp lettuce leaves. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 4-6 large crisp lettuce leaves (e.g. Cos lettuce)
- 2 cups textured soy protein
- Oil for frying
- Water
- 1 lime (zest and juice)
- 2 shallots, thinly sliced
- 2 green onions, chopped
- Fresh chili, to taste
- 1 tablespoon cane sugar (or regular sugar)
- 3 tablespoons soy sauce (e.g. mushroom soy sauce)
- Fresh cilantro or mint (optional)
- 1-2 tablespoons jasmine rice (toasted and ground)
Instructions:
1. Toast raw jasmine rice in a hot, dry pan until it gets color. Then grind the rice in a mortar or blender.
2. Slice the shallots and green onions into thin pieces. Finely chop the chili.
3. Sauté the textured soy protein in oil. Gradually add water until the soy protein softens but remains firm (about double the amount of water compared to soy protein).
4. Add the sliced shallots, green onions, soy sauce, sugar, and chili to the pan. Mix well.
5. Stir in the lime zest and juice, adjusting the lime to your taste preference.
6. Once the filling is ready, spoon it onto the crisp lettuce leaves. Top with the toasted and ground jasmine rice and fresh herbs, if desired.
7. Serve immediately and enjoy!
