Ingredients:
- 500 g lamb (cut into pieces)
- 2 tbsp oil
- 1 large onion (chopped)
- 3 garlic cloves (minced)
- 1 piece of ginger (about 2 cm, grated)
- 2-3 chilies (chopped, to taste)
- 2 tsp curry powder
- 1 tsp turmeric
- 1 tsp coriander powder
- 1 tsp cumin
- 1 tsp garam masala
- 400 g crushed tomatoes
- 400 ml coconut milk
- Juice of 1 lime
- Salt to taste
- Fresh coriander (for garnish)
Instructions:
1. Heat the oil in a large pot. Add the chopped onion and sauté until golden brown.
2. Add the garlic, ginger, and chili, and cook for a few more minutes.
3. Stir in the curry powder, turmeric, coriander powder, and cumin, and sauté the spices for about a minute.
4. Add the lamb pieces to the pot and brown them on all sides.
5. Pour in the crushed tomatoes and coconut milk. Mix well.
6. Let the curry simmer, cover the pot, and cook for about 1.5 hours until the lamb is tender.
7. Add the lime juice and season with salt. Mix well.
8. Serve warm, garnished with fresh coriander.
